
I love the spices in the mince of this recipe. Minimal prep time and max flavour. You can use different nuts, cheeses and spices for variety. You can cook more mince and use the remainder for this recipe to make your meal prep more exciting.
What you need per portion:
one bell pepper
100 g mince lean beef
20 g feta cheese
some grated parmesan
half an onion
1-2 cloves of garlic
4-5 walnuts
teaspoon ground coriander
teaspoon ground cumin
teaspoon dried thyme
tablespoon olive oil
tablespoon curcumin
75 g rice (dry weight)
fresh coriander or rocket to garnish
What to do with it:
Pre-heat the oven to 200-220 degrees C.
First start preparing the mince: heat some olive oil in a pan, finely chop up the onion and garlic and add them. When they start to glaze, add the mince.
Then add the cumin, thyme, ground coriander, salt and pepper and cook the mince until just cooked.
Start to boil some water for the rice.
Then slice the bell pepper in halves and clean them. Divide the beef mince over the two halves and put them in an oven tray. Then top up with the feta cheese, walnuts and parmesan cheese and put in the heated oven for about 15-20 mins until the cheese has melted and the pepper is cooked.
In the meanwhile your water should be boiling, so you can now add the rice and the turmeric. Once the rice is finished your peppers should also be done.
